Originally from the province of Imperia and in particular from the city of Taggia from which they take their name. They have a slightly bitter taste and lend themselves to the most disparate uses in the kitchen, to be enjoyed alone as an aperitif or as a precious condiment for first and second courses. This olive is used as an ingredient for first and second courses, especially for those based on fish.
