Pairings and consumption
The turbot steak macerated in wine for about twenty minutes is excellent
with green olives; the sea bream fillets with a thin crust of bread, scampi alla
grilled lobster on courgette cream; stuffed cuttlefish; risotto with threads of
courgettes and cockles; white meats.
It expresses its optimum within two years from the vintage, but it can be kept
up to 6 years.
